Pumpkin Sweet Puri: A Maharashtrian Breakfast Delight

Ingredients

200 gm grated red pumpkin 2-3 cups whole wheat flour 200 gm jaggery grated a pinch cardamom powder a pinch salt cooking oil to deep fry

Step 1

In a non-stick pan, take the pumpkin and cook till done. Then, add grated jaggery and continue cooking until nice and thick. Let it stand for 5 mins.

Step 2

Then add cardamom powder, salt, wheat flour and start mixing till you get a soft dough. Now, make small balls of the dough and roll them out flat, like a poori.

Step 3

Heat oil in a kadai and deep fry the pooris on both sides. Remove it with a ladle onto a kitchen towel and let it cool down. Enjoy.
