Another efficient method is to take a muslin cloth and wrap your paneer inside it. You don't have to wrap it very tightly. Make sure all edges are sealed and that your paneer is not exposed to any area, or else that portion would harden with time.
While freezing might seem like a good idea for preserving paneer, it can alter the texture and affect the taste. Fresh paneer has a delicate texture, and freezing can make it crumbly or rubbery.
If you want to store paneer for 1-2 days then the simplest way is to put paneer in a vessel or box and fill it with water and refrigerate it. Make sure that the paneer is completely submerged in water. If the paneer is not immersed in water then it will become hard.
Cut it into pieces and keep these in a tray and keep them inside the freezer. When the paneer becomes hard as ice, put it in a zip bag and keep it in the freezer. Whenever you want to use paneer, take it out of the freezer and keep it outside in lukewarm water.
If you want to keep the paneer fresh throughout the week, take water in a bowl and put a teaspoon of salt and submerge the paneer in this water.
